Spécialités: Asparagus, Valaisanne plate, Game, Viande d'hérens

Site: a fine building with the austere charm of the beginning of the last century. Close to the station and the abbey. Menu varies according to seasonal changes. Occasional theme and activity evenings.

Valaisian cuisine: «Fleur d’Hérens» beef, subject to availability. Lamb from the alpine pastures. Roast sausage, atriaux (pork meatballs) and salaisons (salt-cured meat) from Val D’Illiez. Whole cured hams and alpine pasture cheeses refined by ourselves. Valaisian asparagus, (sérac)curd cheese from the alpine pastures, ewe’s cheese from Entremont, mushrooms and herbs from our mountains. Desserts: Valaisian coupes with pears and apricots. Génépi ice-cream with génépi (wormwood)liqueur. Wines: 8 carefully selected specialities by the glass.

Open from Tuesdays to Saturdays. Closed on Sundays. Holidays: 2 weeks at Christmas and 2 weeks at the beginning of August. Access: motorway exit St- Maurice, follow town centre, opposite the train station.
