Appearance, taste/flavour: the taste of the honey comes directly from the flowers, nectar and honeydew gathered. Like wine each year it is different, whilst retaining its characteristic flavour.
Production: inspectors verify that the regulations applying to the operation of the beehives are correctly followed. Chemical analysis enables the absence of antibiotics and the quality of the honey to be verified.
